Valencia. Pop. 796,549. The 3rd largest city in Spain. An industrial city and port exporting mainly food, especially oranges, drink, furniture, ceramic tiles, fans, textiles and iron products. Valencia’s manufacturing sector specialises in metallurgy, chemicals, textiles, shipbuilding and brewing. SMEs (small medium sized enterprises) are an important part of the local economy. Despite it’s industrial activity Valencia has much to offer the visitor including an impressive old city gate, some spectacular modern architecture and some excellent shopping areas. Valencia is also the home of paella, a stir fry rice dish containing a wide variety of seafood, chicken, rabbit and vegetables. Try it with black rice. Valencia also has the celebration of Las Fallas, a 5 day extravaganza celebrating St. Joseph, the patron saint of carpenters. Durning this festival the city shines with lighted streets and colorful ninots. The ninots, paper mache statues made of wood, cardboard, and plaster, are as tall as buildings. At the end of the festival, these statues are burned down at midnight in a spectacular end called "la Crema."
